Winston Banerji, now leading Barrett's Restaurant, brings a rich tapestry of global flavours from his Australian-Indian heritage. Trained in Sydney's elite culinary circles, he's renowned for his Spanish paella and slow-cooked Indian dishes. His innovative approach earned him accolades in Sydney's Culinary Chef Apprentice and Chef's Table competitions.
